Spicy Tiger Shrimps

This is another new dish I created whimsically. I had some jumbo tiger shrimps in the freezer and don't know how to cook them. In the Philippines, the tiger shrimps or "sugpo" are usually just boiled quickly and dipped in spicy vinegar or with tomatoes-egg salad.

I decided to spice up my shrimps and viola, I had this Chinese wanna be dish. I dipped the shrimps in egg whites, then coat with cornstarch before the shrimps goes to the oil for quick frying. Drain excess oil.

For the sauce, saute minced ginger and garlic. Add duck sauce or in my case, I had sweet chili sauce for fried chicken. Wait for the mixture to start bublling and bring back the fried shrimps to soak up the sauce. Garnish with sliced onions or coriander leaves.

Serve with hot cooked rice.
